Chia Seed Pudding
1/4 C chia seeds
1 C liquid (I used coconut milk)
Sweetener to taste (I used a drizzle of maple syrup)
Add-ins of choice (I used blueberries)
Mix together and leave in fridge for a few hours until it gets thick and gooey. Tastes delicious and added bonus of it looks like you’re eating a bowl of bugs and eyeballs.
My friend Mary Kate did goat’s milk, honey and vanilla, and said it was amazing.

ETA: Best technique to avoid a big solid lump of chia seeds is to stir it every couple minutes for the first ten minutes or so, then you can just leave it in the fridge and get on with your life.
